    Craig's Cooking - Chicken Pasta Bake

    Chicken Pasta Bake (serves 2)
    Cooking time 40min

    Ingredients
    1 medium/large chicken breast
    1 small onion diced
    2 handfuls of grated cheese
    Half cup or 200ml Sour cream
    Handful or 2 of peas
    Handful or 2 of corn
    1/3 Parmesan cheese
    Salt
    200grams of spiral pasta or penne

    Method
    1. Preheat grill on med/high. Cook the pasta following the packet instructions. When done drain well.
    2. Throw onion with a bit of oil in a fry pan and soften, try not to brown. Add chicken and cook. Add peas and corn and cook till warm. Add sour cream and parmesan and salt to taste. Cook till all is mixed in well.
    3. Put the cooked pasta in the fry pan and mix everything together.
    4. Place into a oven safe dish and cook under the grill until the cheese melts and goes brown. usually takes 5min. If grilling is not a option a oven on 200deg will do the same thing.
    5. Serve immediately and eat.

    Tips
    Salt is needed, I can’t explain why.

    salt is a flavour 'enhancer', if you dont go overboard. amongst other things.

    why would you use grated crap...a block of parmesan lasts for almost a year.

    you don't explore flavours very well.
    If you liked that chicken bake but want to inhance it even more try adding these

    teaspoon fresh ginger
    2 large shallots
    half a bunch of coriander
    tblspoon garlic fresh
    few shakes of cajgen - you know what i mean..
    and lots of cracked pepper with the red things in it.

    add the shallots just before you bake it so there not soggy when you eat.
