Mexican Pizza (makes 2 pizzas)
Cooking time 60min
Ingredients
3 cups plain flour + more
1 ? warm water
1 teaspoon dry yeast (8g)
1 handfuls of grated mozzarella
1/5th cup Sour cream
Handful of peas and corn combined
Teaspoon of Salt
handful of mince
Splash of oil
Good squirt of tomato and bbq sauces
Method for Dough
1. Put flour, salt, yeast into a bowl. Make a well in the middle. Add the water with a splash of oil and mix well with a knife. Empty bowl onto a well floured bench.
2. Knead the mixture for a good 10min. Sprinkle on more flour if dough gets sticky. It should be firm and stretchy and when pressed should spring back (kinda like pushing my belly)
3. This step is not mandatory but is highly recommended. It?s good to return the kneaded dough back into the bowl and cover. Let sit for 30min so that the yeast does its work and rises. Once done kneed again for 5 min.
4. This mixture will make 2 plate sized pizza bases use one to make my pizza and use the other to make one of your own. Roll out a ball of dough with a rolling pin till it?s bigger then a plate size and about 3mm think.
Method for Pizza
1. Preheat oven to 200deg. Put prepared base onto a oven tray. Squirt tomato and bbq sauce onto the base and spread well.
2. Spread out mince evenly onto the pizza. Spread out the peas and corn onto the pizza. spread out dobs of sour cream all over the pizza. then throw on the cheese.
3. Place tray into the oven and let cook for 15-20min until cheese melts and mince goes brown.
4. Eat hot.
Tips
Sambal is also great to add into the sauce layer for some chilli bite.
