But i would recommend drinking bottled water in any Asian country.
Also be careful of the bottled water you buy as it could be filled up out of a tap anyways lol.

Beer (local brew eg ) can be VND2,000 - 5,000 depending of course the store you buy it from. (BEWARE OF bia hơi beer!!! its not exactly known for being clean) Bia Saigon Tiger are popular and local beers not so expensive.
Spirits are usually imported and you will be paying the cost of normal drink without the taxes so id say $4 - 5 AUD
It all depends on the location :) In singapore a beer can be $2.50SGD with dinner at the little stores, but if you go to a bar / club its more like $4.00

I have been told some tourist places might try and charge you US currency so beware!
Tour's might try and take you to places you dont want to visit, the tour operators get money for taking you to these places so DONT BUY ANYTHING FROM THESE PLACES!! its marked up big time!!!
also if your going to eat at certain shops ect just look around and check to see how clean it is, vietnam doesn't exactly have a health department and it only takes alittle bit of rotten food to spoil a 10 day holiday!
Drink plenty of Bottled water as this will make you body flush out shit quicker so your less likely to get sick :)
