Ah good on you xcorz,
Id suggest if you like ganking, go to Blackrock, most aussies on that server,
a lot of GU guys play on...(someone fill in blank)
and im on Shadow Council.
As for classes, Have a quick flick through the manual to see what you like. It took me a level 33 reroll to find out i prefer rogues,

Many aussies are on frostwolf (my server), kinda the same as blackwolf minus the obscene queue times though we get them sometimes.
Racewise: Not a huge difference - the stats differences are negligible by 60, only racial attributes make much of a difference. If you play horde and are going anything but shaman/druid/hunter make sure you go undead. Best racial skill in the game!
Best PvP (1v1) classes:
shaman > shadow spec priest > rogue (assuming they know how to play their class)
But alot of the time PvP isnt 1v1 so thats when the other classes shine - in combos. And lots of people play for fun not for pvp kills so choose whatever you want!
Edit: Pally can beat all in 1v1 PvP if they got mad skillz and outlast, but they're ghey and I hate them :(
